We love doing salmon patties. Not 100% paleo but very close. Mix up salmon with finely chopped red/green bell peppers, onions, bread crumbs, eggs, herbs, and some other seasonings. Form into patties and pan sear in some olive oil!
Cut 2 pieces of heavy duty foil for the pouches.
Place filets skin side down on foil and brush both sides w/ olive oil.
Salt, pepper and chopped rosemary on the filets
Thinly slice a lemon and put slices on filets.
Wrap up pouches but leave open on top
Squeeze juice of half a lemon into each pouch
1/4 cup sweet Marsala (Florio brand) into each pouch
Top w/ spoonful of capers
Close up pouches
Heat pan over med-high heat for 5 min.
Add pouches and cook for 11 min.
Eat right from pouches or place on top of greens.
