LOL….Me neither. And i don’t know lots of low carb/paleo/zone recipes either….

Ok, how about a grilled chicken pita (in a low carb pita?)

2 chicken breasts cut in strips
Bell pepper, Onion sliced.

Sautee chicken (your choice of oil)until thoroughly cooked, then brown,  add the onions and bell peppers. Season to taste.

Grate some low fat mozzeralla and sprinkle in the pan so it melts.

Skip the pita if you like and serve HOT!

Ok here you go. For one, Dirty Harry made an awesome pizza with sausage as the crust but you need to get the receipe from him. I have a chicken alfredo that my family likes a lot.


Ingredients:
3-4 skinless, boneless chicken breasts
3-4 tblsps olive oil
1 package cream cheese
1 stick + 2tblsps real butter
1 quart half & half ( I use this because of the low carb count-I have found low carb milk to be too thin for this sauce.
1 tub (for lack of better word) of fresh grated parmesian cheese
1 pkg of low car fettucine ( we like the Dream Catcher brand at Albertsons)

Cube 3-4 chicken breasts. Brown chicken in olive oil seasoned with garlic salt & pepper (use large skillet). Drain & set aside.

Mix 1 package of cream cheese with one stick of butter. This is the tricky part. It needs to be mixed completely or it will affect your alfredo sauce later. I use a kitchen-aid stand up mixer and set it on medium speed for approx 2 minutes.

Melt 2 tblsps of butter in same skillet that you browned chicken in, medium low heat. Put cream cheese butter mixture in and slowly whisk in half & half. You have to continually whisk it or the butter and cream cheese will separate over the heat. Once this has mixed together the sauce should still be pretty thin. (If it is not, add more 1/2 and 1/2).  Start adding in the parmesian cheese. I usually do it by handfuls at a time- still continually whisking. How much cheese you add just depends on taste. (My family likes almost the whole tub, I do hold aside some for the top as garnishment.) The sauce will thicken. Add chicken . And serve. We like it over the low carb pasta, but is also delicious with full size chicken breasts and no pasta.

Using low-carb waffle mix, make some Belgian waffles. Add a little butter and top with a few slices of banana and fresh strawberries. Sprinkle with a splenda and spray with whipped cream.  My family loves this for breakfast or brunch and they have whipped cream in a can with no fat and no sugar. Amazing! It’s also really easy.

Here’s another one. Grill some chicken breast and slice. Put in low-carb tortillas with cheese of your choice, and grilled onions and peppers with a little taco or fajita seasoning. Some sour cream and fresh avacado, Fajitas!


Want dessert? Make some low-carb brownies and put a scoop of low-carb vanilla ice cream on top and drizzle with with a sugar-free syrup of your choice. Yum!

Ingredients:

1 Ribeye Steak
salt
black pepper
cayenne pepper

Cooking Instructions:

Rub salt and pepper on steak. Grill over Direct High heat, 3-4 minutes each side.
