You’ll have to pry my Splenda from my cold, dead hands.  LOL

I think it’s fitting to always think of the men and women in service, whether military or peace officers and public safety, as we do our workouts. A bit of motivation to throw a little of our sweat and maybe a drop of blood on the floor in their honor.

I think it tastes just fine… I ‘ll leave a packet on the desk in the office tomorrow. They have it at Orchard’s and Whole Foods if you get down there.

Guilt free Pomeranian Hicama

You will either love it or hate it
Peal and cut a hicama to look like French fries
Dust with Chile Con Limon Mexican seasoning for fruits and vegetables
Put in a baggie, sprinkle with 1 to 2 tbsp of white vinegar. 
Zip and refrigerate 30min. to three days.

Crunchy, and flavorful. 

This Chile Con Limon is also fantastic on mango!

German Rhubarb Apple Sauce

Wash and cut in small slices three large stalks of rhubarb
Peal and slice four large granny smith or pippin apples

Simmer on very low heat (SS that would be 4 on an electric stove) in a covered sauce pan with about 1/8 cup of water. Stir occasionally, until it turns to sauce.  If it starts to dry out before it is sauce add a tablespoon of water at a time. 
Remove from heat and add 3 to 4 packages of NuStevia or Splenda

It is great hot (like pie filing) or chilled like apple sauce.

Cabbage and Onions Persian Style

1 medium onion sliced
1 small cabbage (green) cut in inch slices
1 tsp Italian salad dressing
2 tbsp parsley flakes
1-8 oz. carton of plain yogurt
1 tsp. garlic salt

Remove outer leaves of cabbage and core and slice, and slice the onion too.  Steam the cabbage until tender and drain.  In a non stick pan brown the onion in the salad dressing, onion salt, parsley flakes and a couple of tablespoons of water.  Add water as needed and stir fry until the onion turns translucent and starts to caramelize (turn brown), ands you have cooked off the water.  Add the drained cabbage to the onions and heat.  Remove from the burner and add the yogurt and stir. 

Note, if you leave the yogurt over the burner it will brake, meaning the milk will curdle and you will have a watery mess with what looks like fine cottage cheese.  Cook off the water and eat it anyway, its nothing like the dish prepared correctly but its not bad.

Italian Vegetables

1 bag of scallions
2 cans of chopped tomatoes
5 crook neck, patty pan or zucchini squash
1 tsp. garlic salt
1 tsp. Italian seasoning
1 tsp. Italian dressing

Boil water in a sauce pan enough to cover the scallions.  Wash and cut squash into 3/8 slices.  Boil the scallions in the water for three min., drain and rinse in cold water.  Cut off the root end and squeeze them out of the skins.  Cut into quarters.  In a large non stick frying pan add all the ingredients and cook over medium high heat (7) until the squash is just tender and any free moisture is cooked off.  Add water if needed a tablespoon or less at a time as it is cooking.

Chicken Chili “Zone friendly” (but not exactly zoned- fiddle)

for one avg size crockpot feeds 6

5-7 lbs chicken breast cut into bite sized chunks, pre-cook in microwave
3 cans chili beans in mild sauce
1 can kidney beans
1 can black beans
2 cans diced tomatoes in garlic /olive oil sauce
1/2 can 4 oz regular corn
1 small can diced green chiles

Crock pot cook on low for four hours, then add

salt & pepper to taste
1/2 pound cheddar cheese in chunks
1/4 lb jack cheese cheese in chunks

crock pot cook on med- high additional 3-4 hours… the longer the more tender the chicken.

saute chives and small variety red and yellow peppers thinly sliced in olive oil, put in separate bowl as optional topping
also use grated cheese in separate bowl for optional topping

We had that amazing chili the last time we went to Jeff & Mikki’s. It’s fantastic! Highly recommended by the Randall crew.
